In this pastry class, dive to the secrets of the French brioche. You’ll learn how to create brioche dough from scratch and explore techniques that bring out its perfect texture and flavor. Master these techniques:

Corps

Brioche Dough : Learn how to prepare classic brioche dough from start to finish, mastering the process of incorporating butter, kneading for elasticity, and understanding fermentation for optimal flavor and structure. (Since brioche requires long proofing times, some doughs will be pre-prepared by the chef, but you will go through the entire process step by step, so you can confidently recreate it at home.)
Vanilla Cream : Create a rich and silky vanilla crème pâtissière, perfect for filling your brioche. You'll learn how to infuse milk with real vanilla, temper eggs, and cook the custard to the perfect consistency without curdling.
Fruits Confit : Add vibrant fruit confits to enhance your brioche with a burst of flavor.  
Craquelin Topping : Watch a demonstration on how to prepare a craquelin, a crisp, sweet dough that adds texture and visual appeal. You'll learn how to apply it to your brioche for a delicious contrast between soft and crunchy.       
 

At the end of the class, you'll have the opportunity to savour your delicious creations on the spot and you'll take home all the creations you made. Don't miss this opportunity to refine your pastry skills and indulge in the delightful world of French desserts !
